Chef Chris Manning continues to honor the season with another apple recipe. This one combines apples with Bourbon and chicken.

2 6-ounce skinless, boneless chicken breasts
Mix together the flour, cheese and crumbs. Add the chicken and coat both sides.
Heat the oil in a 14-inch skillet or saute pan on medium to high heat. Saute the chicken until brown on both sides and cooked through. Remove chicken to a serving dish.
Add the onions, peppers, garlic and ginger to the pan and cook until onions begin to wilt. Flambe with the Bourbon.
Add the remaining ingredients and cook until sauce begins to thicken.
