With Thanksgiving coming up soon, Chef Chris Manning shows us one of his favorite dressing recipes.
As with many of his dishes, it combine the sweet with the savory.

Apple Sausage Dressing
- 1-pound loaf bread
- 1 1/2 cups chicken or turkey broth
- 2 cups diced onion
- 2 cups diced celery
- 1 stick butter
- 2 cloves garlic, minced
- 1 bay leaf
- 1/2 pound cooked sausage
- 1 tablespoon rubbed sage
- 4 medium apples, peeled, cored and diced
- 2 eggs, beaten
Toast and cube bread and keep to the side. Put everything else but the egg into a four-quart stock pot and bring to a boil. Turn heat to low and cook until onions begin to wilt.
Turn off heat and add the cubed bread a handful at a time. Add eggs and toss gently until all moisture is absorbed.
Tranfer to a 9" x 13" x 3" baking dish and bake at 350 degrees for 20 minutes.
