TV Dinner: Asian Curried Scallops

It's a flavorful dish that's simple to make.

Chef Chis Manning combines sea scallops with an Asian curry sauce.

Asian Curried Scallops

2 tablespoons butter
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 pound sea scallops
1 stalk celery, diced
1/2 a medium-size onion, diced
1/2 a medium-size green bell pepper, diced
1 small carrot, peeled and diced
6 small mushrooms, sliced thinly.
2 cloves garlic, minced.
1 tablespoon curry powder
1 teaspoon five spice powder
1 medium apple, peeled, cored and diced
1/2 cup heavy cream

Melt butter in a 14-inch saute pan on medium heat. Mix the flour, salt and black pepper together and dredge the scallops in the mixture.

Add the scallops to the pan and cook two or three minutes on each side. Remove the scallops from the pan and set aside.

Add the celery, onion, green pepper, carrot and mushrooms to the pan and cook three or four minutes, until onion begins to wilt. Add the garlic, curry powder, and five spice powder and cook for one minute, stirring to cook the garlic and toast the spices.

Add the apple and cream and bring to a simmer. Return the scallops to the pan and cook on low heat for another minute.

Remove from heat and serve over rice.
