TV Dinner: Biryani Spice Rub


Chef Chris Manning shows us how to make a biryani spice rub.

Biryani is a Persian word that means to fry or to roast. It's a dish that's popular is such places as India, Pakistan and Afghanistan and is served over long-grain rice.

Chris prepares it with chicken, but is also used with lamb, goat, shrimp and vegetables. Although not traditional, it would also be good with pork or beef.

Biryani Spice Rub

- 3 tablespoons curry powder
- 2 tablespoons chili powder
- 1 tablespoon paprika
- 1 tablespoon ground black pepper
- 1 tablespoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon salt

Mix all ingredients to create a dry rub for chicken, lamb or seafood.
