TV Dinner: Cajun Style

Chef Chris Manning goes Cajun with a recipe for cooking meat "blackened".

The spice mix is courtesy of famed Cajun chef Paul Prudhomme. Originally for redfish, Chris says it's great for chicken, steak, pork and shrimp.

Chris says using a cast-iron pan is crucial. Click on the picture for his tips.

Seasoning mix:

1 tablespoon sweet paprika
2 1/2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground red pepper (preferably cayenne)
3/4 teaspoon white pepper
3/4 teaspoon black pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves
