TV Dinner: Carolina Barbecue

Chef Chis Manning shows two takes on Carolina barbecue.

One is good for basting or as a marinade and the other is a marinade.

Either one is great for chicken, beef or pork.

Carolina Barbecue

- 1 cup white vinegar
- 1 tablespoon crushed red pepper
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 cloves garlic, minced
- 1/4 cup ketchup

Mix all ingredients in a two-quart stainless steel sauce pan. Bring to a boil and remove from heat. All to cool and use as a marinade or for basting grilled chicken or pork.


Carolina "Gold" Marinade

- 1 tablespoon salad mustard
- 1 tablespoon Dijon mustard
- 1 tablespoon whole grain mustard
- 1 tablespoon prepared horseradish
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 2 garlic cloves, minced
- 1 teaspoon whole leaf thyme
- 2 tablespoons Worcestershire sauce
- Pinch of salt and pepper
- Dash of hot sauce

Mix all ingredients and use to marinate chicken, beef or pork.

Carolina barbecue pairs well with Coyote Moon Vineyard's Fire Boat Red for pork and Fire Boat White for chicken.
