TV Dinner: Chicken & Sausage Stroganoff

Stroganoff is a Russian dish traditionally made with beef. Chef Chris Manning shows us how to make a version with chicken and sausage.

Chicken & Sausage A La Stroganoff

2 6-ounce skinless, boneless chicken breasts
2 tablespoons olive oil
2 tablespoons butter
1/4 cup diced onion
1 cup sliced mushrooms
1 4-ounce link Italian sausage, cooked quartered and diced
1 clove garlic, minced
1 teaspoon tomato paste
1/4 cup brown gravy
1/2 cup sour cream
1/2 pound egg noodles, cooked
2 tablespoons fresh, chopped parsley or green onion to garnish

Heat the oil and butter in a 14-inch saute pan. Saute the chicken until brown on both sides and cooked through. Remove from pan.

Add the onion, mushrooms and sausage to the pan. Cook until onions begin to wilt. Add the garlic, tomato paste, gravy and sour cream. Turn heat to low and stir sauce gently and let simmer 4 to 5 minutes.

Spoon sauce over chicken and noodles. Garnish with parsley or green onion.
