TV Dinner: Chicken Souvlaki

Chef Chris Manning shows us an easy Greek dish perfect for the beginning of summer.

It's souvlaki and, roughly translated, means "to skewer." It's a popular street food in Greece that's made with chicken, pork, lamb, fish and beef.

And he tops it with a traditional Greek sauce called tzatziki.

Chicken Souvlaki

- 3 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon oregano
- Toppings such as black olive, red onion, tomatoes, as desired.

For marinade, combine olive oil, lemon juice and oregano in a bowl. Cut chicken breasts into pieces and marinade overnight.

Put chicken on skewers and grill over medium heat until cooked through and nicely browned.

Add tzatziki and other toppings as desired.

Tzatziki

- 1 medium cucumber, peeled, seeded and finely chopped
- 1/2 teaspoon salt
- 8 ounces plain Greek yogurt
- 1 clove garlic, crushed
- 1 tablespoon chopped chives or scallion

Combine all ingredients in a bowl and mix well. Refrigerate until ready to serve.
