TV Dinner: Chinese Barbecue

Tools

It'll liven up your cookout.

Chef Chris Manning shows us a Chinese barbecue called char sui. It's sweet and tangy and goes well with chicken or pork.

Char Sui

- 1/2 cup dry sherry
- 1/2 cup soy sauce
- 1/2 cup hoisin sauce
- 1/2 cup sugar
- 6 cloves garlic, minced
- 1 green onion, minced
- 1/4 Spanish or Vidalia onion, minced
- 1 tablespoon black bean paste
- 1 teaspoon minced ginger root
- 1 teaspoon salt
 - 1 teaspoon five spice powder

Combine all ingredients in a two-quart sauce pan. Bring to a boil, then turn heat down to simmer. Simmer for five minutes and remiove from heat.

Allow to cool and use as a basting sauce for pork or chicken. Pairs well with Coyote Moon Vineyard's Marquette.
