TV Dinner: Easy Desserts & Scampi

Chef Chris Manning has a couple desserts and a main dish to show us this week.

The key lime pie and the maple walnut pie are so easy you can get the kids to help.

He also shows us a new take on shrimp scampi with lime and maple syrup.

Key Lime Pie

1 14-ounce can sweetened condensed milk
3 egg yolks
1/2 cup fresh lime juice
1 graham cracker crust pie shell
1 cup whipped cream

In a medium bowl, mix together the milk, egg yolks and juice. Beat until smooth and pour into the pie shell. Bake at 350 degrees for 20 minutes. Allow to cool and top with whipped cream.

 

Maple Walnut Pie

1 14-ounce can sweetened condensed milk
1/3 cup real maple syrup
3 egg yolks
1 cup chopped walnuts
1 graham cracker pie crust
1 cup whipped cream

Pour walnuts into the pie shell. In a medium bowl, mix together milk, syrup and egg yolks. Beat until smooth, then pour over walnuts. Bake at 350 degrees for 20 minutes. Allow to cool and top with whipped cream.


Maple Lime Beurre Blanc

2 tablespoons butter
2 tablespoons real maple syrup
1 tablespoon fresh lime juice
1/4 cup heavy cream

Add the first three ingredients to a small, non-reactive (stainless steel) sauce pan and stir together over medium heat until butter is melted. Add the cream and bring to a boil. Remove from heat. Use with shrimp, scallops or broiled fish.
