TV Dinner: Italian Easter Pie

Chef Chris Manning brings us a traditional Easter dish.

It's called Italian Easter pie and is made mostly of meat and cheese.

The chef says it's great for brunch or as a dinner entree.

Italian Easter Pie

- 1/2 cup dice prosciutto ham
- 1 cup diced cooked Italian sausage
- 2 cups diced smoked ham
- 1 cup shredded mozzarella cheese
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup diced basket cheese (or cheese curd)
- 3 hard-cooked eggs, chopped
- 3 raw eggs, beaten
- Black pepper to taste
- 1 pie crust recipe

Fold together all ingredients except crust. Place half of the crust on the bottom of an oven-proof pie pan. Add filling and top with remaining crust. Brush with egg.

Bake at 350 degrees for 45 minutes or until golden brown. Pairs well with Coyote Moon Vineyard's Casa Papa Red.
