TV Dinner: Sauce Zingara

Chef Chris Manning makes a dish his father called "the dish of the gypsies."

This versatile sauce goes well with chicken, beef or pork and there are many variations, depending on the region and ingredients available.

Chris goes over some of those options in the video.

Sauce Zingara

- 2 tablespoons olive oil
- 1/4 cup diced onion
- 1/4 cup diced green bell pepper
- 1/4 cup diced Hungarian pepper
- 1/4 cup diced mushrooms
- 1/4 cup diced tomato
- 1/4 cup diced cooked ham
- 2 cloves garlic, minced
- 1/2 cup Coyote Moon Casa Papa Red
- 1/4 cup beef gravy
- Salt and pepper to taste

Add the first five ingredients to a 14-inch skillet on medium-high heat and cook until onions begin to wilt.

Add the next three ingredients and cook until the tomatoes begin to wilt. Add the remaining ingredients and simmer for three or four minutes.

Serve over sauteed chicken, pork or beef. Can also be used as a pasta sauce.

Pairs well with Coyote Moon's Casa Papa Red.
