TV Dinner: Sausage Ratatouille


Chef Chris Manning shows us a stewed vegetable dish that was his mom's favorite.

Ratatouille is a dish that originated in the French province of Nice. The chef's mother went to the farmers' market every Wednesday for the ingredients, which always include tomatoes, eggplant and zucchini.

Sausage Ratatouille

- 1/2 pound Italian sausage
- 1/4 cup olive oil
- 1 small onion, chopped
- 1 small eggplant, cut into 1/2-inch cubes
- 1 zucchini, chopped
- 1 clove garlic, minced
- 1 large tomato, peeled and chopped
- 1/2 teaspoon dried whole basil (or use fresh, if available)
- 1/4 teaspoon pepper
- Fresh parsley sprigs, chopped

Cook sausage in a large skillet over medium heat until meat is browned, stirring to crumble. Drain well and set aside.

Heat oil in a large skillet, add onion and saute 2 minutes over medium heat, stirring constantly. Add eggplant and saute 3 minutes, stirring constantly. Add zucchini and garlic, reduce heat and simmer 10 minutes. Add tomato, sausage and seasonings, cover and simmer an additional 5 minutes, stirring once.

Garnish with parsley. Can be served with Coyote Moon Vineyards Casa Papa linguine. Pairs well with Casa Papa red wine.
