TV Dinner: Seafood Kedgeree

In honor of St. Patrick's Day, Chef Chris Manning prepares a traditional Irish dish called kedgeree.

It's traditionally made with with smoked or poached salmon, but the chef uses shrimp and cod.

He says it's great for brunch or as a dinner side dish.

Seafood Kedgeree

- 1-1/2 cups cooked rice
- 1-1/2 cups chopped cooked egg
- 8 ounces cooked shrimp
- 10 ounces cooked cod fish
- 1/4 cup heavy cream
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons fresh chopped parsley
- Salt and pepper to taste.

Combine all ingredients in a medium-size mixing bowl and fold together gently.

Divide into four small oven-proof dishes and bake at 350 degrees for 25 to 30 minutes. It should be lightly browned on top.

Serve as a brunch item or a side dish for dinner.
