TV Dinner: Simple Recipes For Mother's Day


Chef Chris Manning shows us a couple easy recipes to give mom a break for Mother's Day.

He adds eggs to put his own twist on a quesadilla and Monte Cristo sandwich.

Add no-stick spray to a 14-inch saute pan, preferably no-stick, on low heat.

Put tortilla in pan and cover half with with cheese. On top of cheese, add chopped cooked egg, bacon, Italian sausage, peppers, tomatoes, and a little cilantro.

Fold tortilla over to cover filling when cheese starts to melt and flip over, turning again a couple times until crispy and cooked through.

Top with sour cream and Coyote Moon Vineyard's Pete's Salsa, made from their Naked Chardonnay.

Monte Cristo

Make sandwich with turkey, ham, Swiss cheese and a fried egg.

Dip sandwich in egg batter and saute on low heat, turning over to brown both sides.

Both dishes pair well with Coyote Moon's Naked Chardonnay.
