Fat & Sassy Desserts: Quick Coffee Cake


Mary Damianenko whips up a quick coffee cake for the fourth in a series of recipes she's showing us each week in February.

She put together a cookbook of old recipes she updated, making substitutions for old-fashioned ingredients, such as lard. Some of the recipes date back to 1873.

Quick Coffee Cake

2 cups flour
1/2 teaspoon salt
3 tablespoons sugar
4 teaspoons baking powder
1 cup of milk, cream or water
2 tablespoons oil

1 tablespoon cinnamon
3 tablespoons flour
3 tablespoons sugar
3 tablespoons butter

Mix first six ingredients. Mix next four ingredients in a separate bowl.

Use spray oil to coat the sides and bottom of a 9- x 9-inch pan or loaf pan.
