Chef Chris Manning cooks up a Bolognese sauce. It's a traditional Italian meat sauce that's great for these cold winter days.

- 1 medium carrot
- 2 ribs celery
- 1 medium onion
- 4 cloves of garlic
- 1 tablespoons olive oil
- 1 pound ground beef
- 1/2 pound ground pork
- 2 strips bacon, minced
- Coyote Moon Casa Papa red wine
- 14-ounce can diced tomatoes
- 1 jar of Coyote Moon Casa Papa pasta sauce
- Crushed red pepper to taste
- 1/4 cup heavy cream
Coarsely chop first four ingredients, put into food processor and pulse until finely minced.
Saute the vegetables in the olive oil until they become translucent. Add all three meats and cook until meat is brown.
Add wine, tomatoes, pasta sauce and crushed red pepper. Cook on low heat until sauce cooks down and all ingredients are well blended.
Add cream, stir and heat through.
Serve over pasta or in lasagna.
