Chef Chris Manning show us how to make Cuban-style pork chops.
The secret to Cuban-style, he says, is citrus juice, which adds a bright flavor while tenderizing the meat at the same time.

Cuban-Style Pork Chops
- 4 4-ounce center-cut pork chops
- 1/4 cup olive oil
- 1 teaspoon oregano leaves
- 1 teaspoon cumin seeds
- 1 teaspoon salt and pepper
- 1/2 cup sherry wine
- 1/2 cup onion, sliced thin
- 4 cloves garlic, chopped.
- Juice of half a lemon
- Juice of half a lime
- Juice of half an orange
- 3 tablespoons butter
- 1/4 cup all-purpose flour
Add the first 11 ingredients to a gallon-size resealable bag and marinate overnight.
Remove the pork from the marinade and dredge in flour. Saute in butter until cooked through.
Serve over pasta or rice.
