Chef Chris Manning says he's made this dish on 7 News This Morning before, but it was a long time ago.

Georgia Picnic Chicken
- 2 6-ounce skinless boneless chicken breasts, pounded thin
- 1/2 cup all-purpose flour
- 1 cup crushed saltine crackers
- 1 egg beaten
- 1 pinch cayenne pepper
- 1/2 cup smooth peanut butter
- 2/3 cup buttermilk
- 1/4 cup olive oil
- 2 tablespoons butter
- salt and pepper to taste
Mix the egg, peanut butter, buttermilk and cayenne pepper together in a food processor. Dredge the chicken in the flour, then the egg batter, then the cracker crumbs.
Heat the oil and butter to medium-high in a 14 inch skillet. Cook the chicken until brown on both sides and cooked through.
Serve over rice and garnish with fresh-snipped chives.
