TV Dinner: Peas & Pasta


It's usually an off-the-menu item that's offered as a special at Utica-area restaurants.

Chef Chris Manning shows us how to make peas and pasta, a tradition in that area.

Utica-Style Peas & Pasta

- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon fresh lemon zest
- 1/2 cup green peas
- 1/2 cup chick peas
- Salt and pepper to taste
- 1 cup heavy cream
- 1 teaspoon fresh lemon juice
- 1/2 pound cooked pasta, any style

Saute the garlic in the oil in a 14-inch saute pan on medium heat for about 30 seconds, then add the zest and peas. Season with salt and pepper and cook for another minute or two.

Add the cream, lemon juice and pasta. Cook for two or three minutes, then turn off heat.

Serve with Parmesan cheese and minced green onion.

Pairs well with Coyote Moon's La Crescent.
