In honor of Mardi Gras, Chef Chris Manning shows us how to make shrimp creole, a New Orleans favorite.

2 tablespoons olive oil
In a four-quart stock pot on medium-high heat, add the first four ingredients. Cook until onion begins to wilt.
Add the next two ingredients and cook for two minutes. Add the remaining ingredients and simmer for 15 minutes.
Serve with sauteed shrimp or chicken. Also great over broiled haddock.
