It might be lowly and humble, but the green bean is packed with nutrition and can be prepared many ways.

Cornell Cooperative Extension nutritionist Cathy Moore extolled the virtues of green beans on 7 News At Noon.

Moore says green beans can be frozen or canned, have an impressive antioxidant capacity, provide mineral silicon and are versatile to cook with.
