It's an Easter tradition in many Italian families: Easter pie.
Chef Chris Manning uses pie crust, but others use pizza dough or layered slices of bread.
The chef calls this a "poor man's version," because it uses simple ingredients you can find in any store -- even some convenience stores.

- 2 cups small-curd cottage cheese - 2 eggs, beaten - 1/2 cup diced ham - 1 cup shredded mozzarella - 1/2 cup diced pepperoni - 1/2 cup green bell pepper - 1/2 cup diced tomato - 1/2 cup Asiago cheese - 2 9-inch pie crusts
Mix all ingredients except pie crusts together in a medium-size mixing bowl. Set aside.
Place one crust on bottom of 9-inch pie plate and fill with the entire mixture. Place second pie crust on top, crimp edges and cut steam vents on top.
Bake at 350 degrees for one hour or until crust is golden brown. Cool slightly and serve.
