With the first big warm weather holiday of the year upon us, our favorite chef is turning south of the border for a delicious steak recipe.

Chef Chris Manning made Argentine gaucho steak with chimichuri sauce Friday morning, aided and abetted by 7 News anchors Les Shockley and Beth Hall

The first item of business? Seasoning for the steak.

Here's the chef's recipe:

1 tsp. cayenne pepper

1 tsp. granulated garlic

1 tsp. granulated onion

1 tsp. paprika

2 tsp. salt

Make sure you take your steak out of the 'fridge and season it 15-20 minutes before cooking; Chef Manning will tell you the meat will cook more evenly.

Now, the sauce:

1 cup, lightly packed parsley

1/2 cup, lightly packed fresh oregano leaves

5 garlic cloves, chopped

1 small shallot, peeled and chopped

1 green onion, chopped

1 tsp. salt

1/2 tsp. ground black pepper

3 pinch, crushed red chiles

3/4 cup, olive oil

juice of half a lemon

2 tbsp. sherry vinegar

Place the first eight ingredients in a food processor and pulse until minced. Add the remaining ingredients and pulse until mixed thoroughly. Use as sauce for the steak - or a marinade for chicken or pork.

Pair with Coyote Moon's Casa Papa red wine.
