It's not the typical barbecue sauce you find in a jar.
Chef Chris Manning shows us how to make jalapeño barbecue sauce.
He says it's great with chicken, pork, fish or shrimp. In the video, he serves it with cod.
Jalapeño Barbecue Sauce
- 10 medium-size jalapeño peppers, stemmed, seeded and coarsely diced- 8 cloves garlic- 1 8-ounce can tomato sauce- 1/2 cup water- 1/4 cup brown sugar- 1/4 cup white vinegar- 1/4 cup molasses- 1 teaspoon ground cumin- 1 teaspoon paprika- 1 teaspoon ground coriander- 1 teaspoon kosher salt
Bring all ingredients to a boil in a medium sauce pan on high heat. Reduce heat to low and simmer for about 10 minutes.
Remove from heat and allow to cool. Pureé in a food processor. Use as a marinade and glaze for chicken, pork, fish or shrimp.
