WATERTOWN, N.Y. (WWNY) - Next weekend is the Cream Cheese Festival in Lowville and Chef Chris Manning is acknowledging it this Friday and next.
This week, he's focusing on savory dishes that use cream cheese. Sweet dishes will be featured next week.
For this Friday, he makes a blue cheese dressing and an alfredo. He also talks about using cream cheese instead of butter in your mashed potatoes.

Cream Cheese-Blue Cheese Dressing
- 1 cup cream cheese
- 1 cup crumbled blue cheese
- 1 cup mayonnaise
- 1 cup buttermilk
Combine all ingredients in a blender or food processor and blend until smooth.
Cream Cheese Alfredo
- 1 tablespoon butter
- 1 green onion, minced
- 1 8-ounce package cream cheese
- 1 cup heavy cream
- Salt & pepper to taste
- 1/3 cup grated Parmesan cheese
- 1 pound pasta, cooked
Heat butter, cream cheese, and green union on medium heat in a four-quart Dutch oven. Cook until cream cheese begins to melt. Add cream, salt, and pepper and cook until sauce begins to thicken. Add Parmesan cheese, then pasta and heat until warmed through.
Serve with extra Parmesan on top.
