WATERTOWN, N.Y. (WWNY) - This one goes back to our favorite chef’s days at the Park Avenue Club in Rochester.
Chris Manning showed Beth and Makenzie the secret of delicious stuffed, bacon-wrapped shrimp Friday morning. (Yes, it is delicious. We can testify to that - Chris left some in the newsroom.)
Here’s the recipe from Chef Manning.
Start with two cups of cream cheese. Let soften into medium-size mixing bowl.
Add half a cup of horseradish and two level cups of chopped, fresh spinach. Mix everything together. This is your stuffing.
Pre-heat your oven to 375 degrees.
Place bacon on clean work surface. You should have between 16 and 20 peeled, de-veined shrimp, split with the tails on. Put a shrimp in the center of a piece of bacon, add a tablespoon of the stuffing, wrap the bacon around the shrimp and secure the whole thing with a toothpick.
Bake for 20-25 minutes or until the shrimp are firm and the bacon is browned. Drizzle with real maple syrup before serving.
