TV Dinner: loaded potato pancakes

WATERTOWN, N.Y. (WWNY) - It’s a tasty and hearty way to start the New Year.

Chef Chris Manning shows us his mother's recipe for potato pancakes.

He makes these loaded with cheddar and bacon. You can leave those out for a non-loaded version.

He serves them with apple sauce and andouille sausage.

Loaded potato pancakes

- 4 cups steamed and grated potatoes, skins on

- 2 eggs, beaten

- 1/2 cup milk

- 2-3 cloves garlic, minced

- 3 strips bacon, cooked & diced

- 2 tablespoons grated Parmesan cheese

- 1 cup shredded cheddar cheese

- 4-6 tablespoons flour

- Salt & pepper

- 2 tablespoons olive oil

Carefully fold together all ingredients except olive oil. Heat oil in nonstick pan on medium-high heat. Scoop mixture into pan and gently press down.

Cook until crispy, about four minutes on each side.

Garnish with sour cream and chopped green onions.
