TV Dinner: Spice Rub & Pineapple-Mango Salsa

Chef Chris Manning's father learned this recipe when he was stationed at Fort Hood in Texas years ago.

And he passed that recipe along to his son.

It's great for grilling or you can sauté the meat in a pan.

- 1 tablespoon paprika
- 1 tablespoon brown sugar
- 1 tablespoon cumin
- 1 tablespoon granulated onion
- 1 tablespoon granulated garlic
- 1 tablespoon chili powder
- 2 tablespoons salt
- 2 tablespoons black pepper
- 1 teaspoon ground cayenne

Mix all the ingredients together and use as a rub for pork, chicken or beef. Yields 1/2 cup of rub.

Pineapple-Mango Salsa

- 2 cups diced pineapple
- 1 cup diced mango
- 1 jalapeño, stemmed, seeded & diced
- 1 small red bell pepper, diced
- 1/2 cucumber, seeded and diced
- 2 green onions, minced
- Salt & pepper to taste

Mix all the ingredients together. Chill for at least an hour before eating.

Both recipes pair well with Naked Chardonnay from Coyote Moon Vineyards.
